Roasted Whole Chicken Recipe

The best roast whole chicken recipe ever!

Ingredients

  • 1 Whole Chicken
  • 1 Onion
  • 3 tbs Olive Oil
  • 2 tsp Paprika
  • 2 tsp Pink Salt
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Thyme
  • 1 1/2 tsp Black Pepper

Instructions

  1. Preheat your oven to 375 degrees. Rinse your whole chicken under some cold water. Place chicken, breast side down, on a work surface. Starting at thigh end, cut along 1 side of backbone with knife or kitchen shears. Turn chicken around; cut along other side. Flip the chicken, and open it like a book. Press firmly on breastbone to flatten.

  2. Pat down the whole chicken until it's dry. Pour the olive oil on the whole chicken making sure to get oil on every part of the chicken. Then get a kitchen brush and brush the oil on the chicken to spread it evenly.

  3. Get a bowl and add your pink salt, onion powder, garlic powder, thyme, black pepper, and paprika then mix it until well combined with a spoon. Then pour season mix on your whole chicken until fully covered. Reference the picture beside this step to see how I completely covered the whole chicken. Chop up your onions into quarters and place them on each side of the chicken. Then place the chicken on a wire rack with a pan on the bottom to catch the juice. Place the whole chicken in the oven for 1 hour and 20 minutes.

  4. Once the chicken is done take while the chicken is still hot, take the chicken off the wire rack and place it directly in the pan with the juice. Get a spoon and spoon some of the juice on the whole chicken. Then place some aluminum foil on top of the pan and let it rest for 10 to 15 minutes. Then cut and enjoy or serve to your guest! 🙂
